Internal vs Ambient Temperature

There are always two temperatures in play the heat inside your grill, and the heat inside your food. They are not the same. Your grill might read 400°F at the lid, while the center of your steak is still far below your target doneness. Understanding the difference between ambient temperature and internal temperature is what prevents:

  • raw centers
  • dry exteriors
  • uneven cooking

One number tells you how hot the environment is.
The other tells you when the food is ready. Confusing the two is one of the most common beginner mistakes.

Why Lid Gauges Lie

Built-in lid thermometers are convenient — but rarely precise. They measure air temperature at the top of the grill. Not at grate level.
Not near your food. Add wind, fuel shifts, and airflow changes and the number becomes even less reliable.

That doesn’t make them useless.It just means they’re reference tools not decision tools. If you rely only on a lid gauge, you’re guessing at what actually matters.

Placing the Probe Incorrectly

Too shallow  and you measure surface heat.
Too deep  and you hit bone.

Ignoring Carryover Cooking

Meat continues cooking after you remove it from heat.

If you wait until it hits the final temperature before pulling it off –
you’re already too late.
